Tacos are an original way of serving pulled pork because they are decorative and they will make a great meal for parties.
Ingredients:
- 1 lb pulled pork (either smoked, slow cooker or oven roast)
- 8 corn tortillas or taco shells
- 1/2 cabbage small, finely shredded
- 8 small pickled cucumbers, cut in shape of thin sticks (Julienne cut)
- 4 potatoes, average size, baked, sliced
- 1 onion, chopped
- Yellow mustard
- Salsa
- Garlic sauce (buy it or make it at home using 10-12 garlic cloves, minced and mixed with olive oil and salt until the mix becomes creamy and white)
- Green taco sauce (to be served as a side dish)
Preparation time: 20 minutes
Cooking time: 30 minutes
Serves: 8 people
Preparation method:
Shred the pork meat pulling it apart with two forks, making sure to discard as much fat as you can from it. If it gets cold, you need to reheat it. If it’s not moist enough, you can add a little salsa and stir it well while heating. Fill in the taco shells by adding first the pulled pork meat, a little bit of mustard, then a layer of pickled cucumbers, then the shredded cabbage and finally the potato slices. The ingredients should be well balanced, in such a way that all tastes can be felt, so don’t exaggerate with any of them if it seems too much. Pour some garlic sauce over the tacos. Serve them hot with green taco sauce and with salsa. If you’re afraid your dinner guests might not be real garlic fans, you can serve the garlic sauce separately in small bowls.
